the perfect cookie (~48 hours)



Brown a cup of unsalted butter, add a few pinches of espresso powder and cinnamon once butter is almost done, finish toasting together. Cool over night.

Mix 1 1/2 cup of AP flour with 1/2 cup of cake flour, big pinch of salt, 1 teaspoon baking powder, 1 teaspoon baking soda + a pinch extra if you want it more tender.

In another bowl, mix 1 cup granulated sugar + 1/3 dark brown sugar + a few globs of vanilla paste .. add in browned butter mixture and mix on high until *combined.

Once combined, add 2 room temp eggs, cream together. Then fold in your dry ingredients. Right before the flour is gone, add in 2 cups of your favorite topping.

Mix in whatever you want (chocolate, candy bars, toffee, nuts, chips etc.) and however much you want. I cut up toffee and chocolate bars (70% cacao) and sometimes pecans.

Chill dough over night.

375 f for 10ish minutes. Make ‘em big for xtreme flavor, sprinkle with salt or sugar or sprinkles before baking.
