how to make very good cookies:


brown a cup of unslated butter. let is cool a little. add a few pinches of espresso powder and cinnamon. cool overnight.

mix 1 1/2 cup of ap flour with 1/2 cup of cake flour, big pinch of salt, 1 teaspoon of baking powder, 1 teaspoon baking soda + a pinch extra if you want it more tender.

in another bowl, mix 1 cup granulated sugar with 1/3 dark brown sugar and a few globs of vanilla paste (the bourbon one from trader joes). add in browned butter mixture and mix on high until combined.

once combined add 2 room temp eggs, cream together. then fold into your dry ingredients. right before the flour is gone, add in 2 cups of your favorite topping. 

mis in whatever you want (i like 70% cacao chocolate & homemade toffee) 

chill dough over night. 

375 f for 10ish minutes. make em big for max flavor. 

sometimes i take a cookie cutter and wiggle them around to make them the perfect circle.

sprinkle with salt (duh).
